Carrollton, GA: Rolling Hills Resource Conservation & Development
Council and the Carroll County Cooperative Extension Service are pleased
to announce a sustainable agriculture program being offered called the
Sustainable Growers School. This program is designed to teach new and
existing growers sustainable farm and land conservation practices. This
exciting program is taught at the Carroll County Extension Service Office
in Carrollton, Ga. and on local farms that employ sustainable and organic
practices. SGS utilizes classroom, lab and field work as practical elements
in educating its students in sustainable and organic production management
and marketing practices. The course consists of 4 core session and two
3 session elective tracks. The class runs alternate Saturdays starting
January 10th. Mentoring opportunities will be available throughout the

March 22, 2009 Home Cheese Making: Mozzarella, Feta and more!! Making
cheese at home is easy and fun! Join us as we explore the lost art of
home cheese making. We will create and sample several simple cheeses
that can be cultivated at home including: Paneer (an East Indian staple),
basic farm cheese (a hard cheese historically created on the small family
farm), Chevre (a soft spread able goat cheese). Mozzarella and feta.
After learning to make kefir, we will transform this fermented milk
beverage into soft spread able cheese and a condiment that can be used
in place of sour cream. You’ll also learn some cooking ideas for
whey, an abundant by product of cheese making. Students can build on
this introduction to create many varieties of cheese at home. Includes
instruction, inspiration, samples, cheese to take home, recipes and

Food from the Slow Cooker, a demonstration class with food samples at

during the late fall and winter doesn't need to be time consuming. Stocks,
soups, and stews from sustainably-raised meat along with breakfast porridges

a demonstration class with food samples. Preserving the fall harvest
can provide you with local food throughout the year that is delicious
and highly nutritious. Jessica, Maggie and Sarah will show you why fermentation
is an easy and inexpensive way to preserve the bountiful harvest of
fruits, vegetables and herbs grown locally. You will learn about the
health benefits of lacto-fermented vegetables and beverages and how
to turn the fall harvest into sauerkraut, kimchee, chutneys, salsa,
and sauerruben. Kombuchas, ginger bug, and whey-based sodas will also

411 Main Road in Gill, 3.9 miles north of Route 2. David Gumpert, author
of "The Raw Milk Revolution: Behind America's Emerging Battle Over
Food Rights" (to be released in November) will be the featured
guest at this fundraiser for the NOFA/Mass Raw Milk Network.
"Beginning in 2006, the agriculture departments of several large
states-with
backing from the U.S. Food and Drug Administration-launched a major
crackdown on small dairies producing raw milk. David Gumpert dares to
ask whether regulators have the public's interest in mind or the economic
interests of dairy conglomerates. He assesses how the government's anti-raw-milk
campaign fits into a troublesome pattern of expanding government efforts
to sanitize the food supply-even in the face of ever-increasing rates
of chronic disease like asthma, diabetes, and allergies. The Raw Milk
Revolution provides an unsettling view of the future, in which nutritionally
dense foods may be available largely through
underground channels."
